These high-altitude beans from Doi Saket are honey-processed, a method that leaves just enough of the fruit on the bean during drying to create a cup that's bright, complex, and a little wild. Expect zesty citrus up front, the structure of black tea in the middle, and a clean cane-sugar sweetness that ties it all together. It's the coffee you take on a trip somewhere you've never been. Brew it any way you like. It's adaptable like that.
